Odia Traditional Tomato Kanji

How to prepare Tomato Kanji 




Ingredients:
  • Broken Rice 1/2cup
  • Brinjal 1pc
  • Turnip 1pc
  • Radish 1pc
  • Tomato 3pc
  • Flaten Beans 7-8pc
  • Turmeric Powder 1/2tsp
  • Salt 1tsp
  • Panch Phoran 1tsp
  • Green Chillies 2pc
  • Dry Chillies 1pc
  • Curry Leaves
  • Crushed Garlic 1tsp
  • Corrinder leaves
  • Hing a Pinch
  • Mustard Oil 1tsp
  • Water 2glass
Preparation Method:
  • Boil the water in a kadai and add washed broken rice.
  • Cook it for 2-3mins.
  • Add the sliced Vegetables, turmeric powder, salt.
  • Let it cook.
  • Add the tomato puree after vegetable get cooked.
  • Cook it for 3-4mins more.
  • Add chopped corriender leaves.
  • Put the tampering pan and add oil to it.
  • Add curry leaves, dry n green chillies, panch phoran, hing, crushed garlic.
  • Fry till garlic get change in color.
  • Add the tampering to the kanji and cover the lid.
  • Serve it with rice.

Odia Chhena Poda

How to prepare Chhena Poda 




Ingredients:
  • Milk 1litre
  • Semolina 1tbsp
  • Sugar 3tbsp
  • Desi Ghee 1tsp
  • Dry fruits of your choice
  • Ilaichi Powder 1/2tsp
  • Lemon Juice 1tbsp
Preparation Method:
  • Boil the milk in a kadai.
  • Add lemon juice mixed with 1tsp of water slowly to the milk.
  • Stir it continuesly on high flame till Chhena get separated .
  • Strain to get the Chhena.
  • Take the Chhena in a mixing bowl.
  • Add Semolina, Sugar, Ilaichi powder, Dry fruits, ghee.
  • Mash the Chhena well.
  • Add the 2tbsp whey to the mixture.
  • Greese the mould with ghee and add the Chhena mixture to it.
  • Heat the pressure cooker.
  • Add the salt and spread on base.
  • Place a stand.
  • Place the mould on stand.
  • Cover the lid and bake it for 40mins.
  • Check if the Chhena poda is done with the help of a wet knife.
  • If it not sticking to the knife switch off the flame.
  • Let it cool down.
  • Demould the Chhena Poda to a plate.

Homemade Garam Masala

How to prepare Garam Masala Recipe 




Ingredients:
  • Corriender Seeds 2cup
  • Cumin Seed 1cup
  • Fennel Seeds 3/4cup
  • Bay Leaves 10-12
  • Cinnamon 1inch pc 1/2cup
  • Star Anise 10pc
  • Nutmeg 1pc
  • Black Pepper 1tbsp
  • Cloves 1tbsp
  • Green Cardamom 12pc
  • Mace/Jaipatri 1tsp
Preparation Method:
  • Dry roast the corriender seed and take it out to a bowl.
  • Dry roast the cumin n fennel seed together, take it out to the same bowl.
  • Dry roast the bay leaves.
  • Dry roast the cinnamon and star anise together.
  • Crush the Nutmeg.
  • Take a grinding jar add cloves, black pepper, ilaichi, fried cinnamon, fried star anise, crushed nutmeg and mace to it.
  • Grind it to a smooth powder.
  • Grind the crushed bay leaves, fried mixture of cumin, corriender, fennel seeds.
  • Mix the powder well.
  • Blend it for twice.
  • Store it in a air tight container.

Odia Vegetable Podapitha

How to prepare Odia Vegetable Podapitha 




Ingredients:
  • Urad dal 1cup
  • Idli Rice 2cup
  • Cauliflower Florets
  • Chopped Cabbage
  • Chopped Carrots
  • Chopped Beans
  • Chopped Beetroot
  • Cumin Seed 1tsp
  • Chana dal 1tsp
  • Grated Ginger 1tbsp
  • Curry leaves
  • Peanut 1/2cup
  • Cumin Powder 1tsp
  • Salt to taste
  • Hing a pinch
  • Corriender Leaves
Preparation Method:
  • Soak the urad dal and rice for 6-7hrs.
  • Drain the water and grind to a smooth paste.
  • Let it to ferment for 5-6hrs.
  • Add salt and mix it well.
  • Heat a kadai and add peanut, cumin seed, curry leaves, ginger,hing.
  • Add the chopped veggies, cumin powder, salt.
  • Fry till partly cooked and add chopped corriender leaves.
  • Mix the sauted veggies to the batter.
  • Heat a pressure cooker.
  • Add 1tbsp of oil to it.
  • Add the batter, plain the surface gently.
  • Cover the lid without whistle.
  • Cook it for 15mins.
  • Check it with wet knife.
  • If done switch off the flame and let it to cool completely.
  • Take out the vegetable poda pitha in aplate, slice it n serve.

Green Chillies Curry/ Mirchi ka Salan

How to prepare Mirchi ka Salan 




Ingredients:
  • Green Chilli 5-6
  • Onion 1pc
  • Curry Leaves
  • Mustard Seed 1/3tsp
  • Peanut 1/2cup
  • Grated Coconut 2tbsp
  • Turmeric Powder 1/2tsp
  • Red Chilli Powder 1tsp
  • Corriender Powder 1tsp
  • Garam Masala 1/2tsp
  • Salt to taste
  • Tomato puree 1/2cup
  • Kasoori Methi 1tsp
  • Oil 2tbsp
Preparation Method:
  • Deseed the green chillies and fry it with some oil.
  • Make a paste of peant, coconut, turmeric powder, red chilli powder, corriender powder with little water.
  • Heat the pan and add oil.
  • Add mustard seed, sliced onion, curry leaves, fry till onion get light brown in color.
  • Add tomato puree, masala paste and water.
  • Add salt and let it to boil.
  • Add kasoori methi and fried green chillies.
  • Cook it for 5mins on low flame.
  • Serve it with biriyani.

Matar Chicken Masala

How to prepare Chicken and Green Peas Curry 




Ingredients:
  • Chicken 600gm
  • Green Peas 250gm
  • Whole Garam Masalas
  • Bay Leaves 2pc
  • Cumin Seed 1tsp
  • Onion 2pc
  • Ginger n Garlic Paste 2tsp
  • Tomato Puree 1cup
  • Turmeric Powder 3/4tsp
  • Red Chilli Powder 1tsp
  • Cumin Powder 1tsp
  • Corriender Powder 1tbsp
  • Garam Masala Powder 1tbsp
  • Salt to taste
  • Oil 2tbsp
  • Corriender Leaves
Preparation Method:
  • Mix all the dry masalas, add splash of water make a mixture.
  • Heat the kadai and add oil to the kadai.
  • Add bay leaves, cumin seed, whole garam masalas.
  • Add chopped onion, followed by ginger n garlic paste.
  • Add masala paste and tomato puree.
  • Fry till moisture get evaporated.
  • Add chicken pieces, green peas stir it well.
  • Add salt and 1/2cup of water.
  • Cook till chicken get cooked well.
  • Add chopped corriender leaves.
  • Serve with rice and roti.

How to prepare Snakegourd Mustard Curry 




Ingredients:
  • 3pc Snakegourd Chopped 
  • 2pc Potato Chopped
  • 1pc Onion Chopped
  • 1pc Tomato Chopped

  • Cumin Seed 1tsp
  • Panch Phoran 1tsp

  • Heat the pan and add oil to the pan.
  • Add dry chillies, panch phoran, hing, curry leaves.
  • Meanwhile make a smooth paste of mustard and cumin seeds.
  • Add chopped onion and tomato to pan and cook it till it done.
  • Add turmeric and red chilli powder.
  • Add mustard paste.
  • Add the chopped snakegourd and potatoes.
  • Add salt and stir it well.
  • Cook it till the veggies get cooked well.
  • Serve it with rice n roti.

Egg Cube Curry

How to prepare Egg Cube/Junnu Curry 




Ingredients:
  • Egg 5pc
  • Onion 1pc
  • Cumin Seed 1/2tsp
  • Mustard seed 1/3tsp
  • Ginger n Garlic Paste 1tsp
  • Tomato Puree 1cup
  • Turmeric Powder 1/2tsp
  • Red Chilli Powder 1/2tsp
  • Cumin Powder 1/2tsp
  • Corriender Powder 1tsp
  • Garam Masala Powder 1/2tsp
  • Salt as per taste
  • Black Pepper Powder 1/3tsp
  • Oil 1tsp
  • Corriender Leaves
Preparation Method:
  • Brake all the eggs in a mixing bowl.
  • Add salt and black pepper powder, whisk it well.
  • Take it in a plate and stream it till it get set.
  • Cut it into desired shape.
  • Put the kadai on flame.
  • Add oil to the kadai.
  • Add mustard seed and cumin seed.
  • Add chopped onion and fry it till get transparent.
  • Add Ginger n Garlic paste.
  • Add tomato puree and fry till moisture get evaporated.
  • Add dry masalas, salt.
  • Add water 1 cup.
  • Let it to boil.
  • Add egg cubes to it.
  • Cook it for 3-4mins on low flame.
  • Add chopped corriender leaves.

How to prepare Perfect Chicken Pakora 





Ingredients:
  • Boneless Chicken 250gm
  • Ginger n Garlic paste 1tsp
  • Turmeric Powder 1/2tsp
  • Red Chilli Powder 1/2tsp
  • Corriender Powder 1tsp
  • Garam Masala 1tsp
  • Salt to taste
  • Baking Soda a pinch
  • Vinegar 1tsp
  • Egg 1pc
  • Corriender Leaves
  • Edible Food Color a pinch
  • Cornflour 2tbsp
  • Curry Leaves
  • Oil to deep fry
Preparation Method:
  • Take the boneless chicken in a mixing bowl.
  • Marinate the chicken with Ginger n Garlic paste, Turmeric Powder, Red Chilli Powder, Corriender Powder, Garam Masala, Salt to taste
  • Baking Soda a pinch, Vinegar, Egg 1pc.
  • Keep aside for 1hr.
  • Add Chopped corriender leaves, edible food color, cornflour after 1hr.
  • Mix it well.
  • Deep fry the chicken pieces one by one till it became dark brown in color.
  • Add curry leaves.
  • Take it out the chicken pieces along with the fried curry leaves.

Coconut Dosa/ Chitau Pitha

How to prepare Coconut Dosa 




Ingredients:
  • Coconut 1/2pc
  • Idli Rice 2cup
  • Salt to taste
  • Oil to prepare dosas
Preparation Method:
  • Soak the rice for 5-6hrs.
  • Grate the coconut.
  • Strain the rice.
  • Take a blender add soaked rice and grated coconut to it.
  • Make a smooth paste.
  • Rest it for 1-2hrs.
  • Add salt to taste and mix it well.
  • Heat the tawa and greese oil on it.
  • Put a laddle ful batter on tawa.
  • Spread it gently.
  • Cover and cook till dosa get set.
  • Take it out the dosa.

Ingredients:
  • Cauliflower Florets
  • Besan 1cup
  • Rice Flour 1/2cup

Ingredients:
  • Lady Finger/Okra 200gm
  • Curd 1cup
  • Gram Flour 1/2cup

  • Add fried lady finger pieces and Chopped Corriender leaves.
  • Tamper it with green chilli, dry chilli, ginger, panch phoran, hing, curry leaves.

Healthy Manja/Banana Stem Santula

Ingredients:
  • Banana Stem/ Manja
  • Mix veggies of your choice
  • Moong dal 1/2 cup
  • Turmeric Powder 1/2tsp
  • Mustard Seed 1/2tsp
  • Cumin Seed 1/2tsp
  • Urad dal 1tsp
  • Curry leaves
  • Green Chillies 2pc
  • Ginger Crushed 1tsp
  • Garlic Crushed 1tsp

Preparation Method:
  • Chop the banana stem, add salt and wash it.
  • In a pressure cooker add water 3/4th glass.
  • Add turmeric and salt.
  • Add the washed moong dal, chopped veggies and chopped banana stem.
  • Pressure cook it for 2 whistles.
  • Heat the kadai and add oil to it.
  • Add the mustard seed, cumin seed n urad dal, curry leaves and green chillies.
  • Add crushed ginger and garlic.
  • Fry till raw smell goes away.
  • Add the boiled manja n veggies.
  • Cook it for 2mins.
  • Add chopped corriender seed.
  • Serve it.
